Would love some vegan breakfast options that feel breakfasty (USian). Avacado toast is great but avacados can be pretty pricey and I can't eat that every day. Currently I just have a bunch of cashews in the morning and while I do love cashews I want something that has the right vibes and cashews just don't.

Embrace Colombian/Japanese thought and just have soup for breakfast. Try it and you'll realize that no one is stopping you but yourself and the bourgeois notions of "breakfast food".

[-] woozy@hexbear.net 14 points 3 weeks ago* (last edited 3 weeks ago)

yesssss soup is so comforting in the morning, warms your whole body up. Korean cabbage and soybean paste soup and Vietnamese tomato egg soup (with silken tofu instead) in the morning are just the best! what's your favorite Columbian soup recipe? i want to try :o

edit: just saw the vegan changua recipe you shared, it looks so good!!!

[-] TraschcanOfIdeology@hexbear.net 6 points 3 weeks ago* (last edited 3 weeks ago)

Just replied with my fav in another post on this thread!

[-] sharkfucker420@lemmy.ml 8 points 3 weeks ago

I do fucking love soup. Miso would do I think

[-] TraschcanOfIdeology@hexbear.net 9 points 3 weeks ago* (last edited 3 weeks ago)

Look up changua, it's a Colombian scallion, cilantro and bread breakfast soup that's usually made with

cw: animal productsMilk and poached eggs

But could as easily be made with vegetal milk and no animal products.

Edit: found a vegan recipe that looks p legit https://mom.com/momlife/vegan-colombian-changua-recipe

Thanks though, it sounds delicious

[-] SnakeEyes@hexbear.net 7 points 3 weeks ago

Thank you for the recipe, it sounds pretty good

Yes! I cook noodles and drink the broth for breakfast, and then save the noodles for later that night when I fry them with veggies.

aleays been a fan of oatmeal. you can dress it up all kinds of ways

[-] undeffeined@lemmy.ml 3 points 3 weeks ago

Oatmeal gang, REPRESENT!

Seriously, its an awesome breakfast. Very versatile with the different toppings you can use.

[-] inTheShadowOf@hexbear.net 13 points 3 weeks ago

Highly recommend oatmeal!

[-] Are_Euclidding_Me@hexbear.net 12 points 3 weeks ago

I often do toast. Or tofu scramble, but that's become more of a dinner food because it takes time to make. But I do love leftover scramble for breakfast! I also sometimes do grits. And lately I've been doing tater tot wraps, with a little (vegan) cheese, some spinach, refried beans, and whatever hot sauce/salsa is hanging out in the fridge.

Not USian, but the most common breakfast in Finland is oatmeal or any other porridge, I personally prefer 4 grain porridge which has wholemeal oat, barley, rye and wheat in it.

The simplest way to make it is microwave porridge. You put 1dl of your oats and 2-3dl of water and a pinch of salt into a bowl and mix them. Microwave on high for three minutes and done.

I usually eat mine with homemade apple jam and oat milk. Or just oat milk, vegan butter, sugar and cinnamon. Maybe throw some nuts on top like cashews or pecans. It's also great with fruits and berries.

My other go-to breakfast is a vegan smoothie where I use oat milk, half of a banana, often a half of an avocado if I have them, frozen lingonberries, a scoop of strawberry flavored vegan protein powder, flax seeds and psyllium husks plus a sweetener.

Tofu scrambles, toasts with nut butters, and some kind of oatmeal are the 3 GOATs of my breakfasts.

[-] comrade_pibb@hexbear.net 7 points 3 weeks ago

Tofu scrambles are goated, i love adding some turmeric and nooch

[-] Cowbee@hexbear.net 4 points 3 weeks ago

Always great adds!

[-] simpletailor@hexbear.net 10 points 3 weeks ago* (last edited 3 weeks ago)

Very quick: Müsli or oatmeal, overnight optional; Fruit and/or nuts; Toast/bagel with peanut butter, jam, or margarine;

Less quick: Tofu scramble; Tofu "egg": Mung bean "egg" (good for omelets or egg sandwiches): Crêpes, pancakes, or waffles made with vegan batter; French toast (either with the mung bean "egg" as batter or a vegan batter); Home fries / hash browns

I'm not one for meat substitutes, but there are plenty of vegan breakfast sausages on the market if thats up your alley

[-] Krem@hexbear.net 9 points 3 weeks ago

with just plain white tofu and your preferred seasonings you can make all kinds of spreads, just blend it smooth and you can make something cream cheese like. if you live somewhere where tofu is cheaper than bread, this and some wholegrain toast is a cheap and really nutritious breakfast.

[-] LaGG_3@hexbear.net 4 points 3 weeks ago

Do you use silken tofu for this or just whatever works?

I'd add in different kinds of hummus or bean spreads are nice on toast or a bagel in the morning. When I had more time on my hands I'd make a tasty cilantro jalapeño hummus for my breakfasts.

[-] Krem@hexbear.net 6 points 3 weeks ago

either soft tofu for a very smooth spread, or "old" tofu (whatever it's called in english, semi-firm?) for a grainier spread.

[-] Carl@hexbear.net 9 points 3 weeks ago

My go-to breakfast these days is fried potatoes. They're dirt cheap and tasty. Combine with a tangy-sweet fruit and you'll have all the flavors.

[-] sharkfucker420@lemmy.ml 4 points 3 weeks ago

I can't be eating more potatoes, it's bad enough as is lmao. Completely agree though, that sounds fire

[-] built_on_hope@hexbear.net 9 points 3 weeks ago

What everyone else said. I like vegan sausages too, the Beyond ones are dece and often seem to be on sale near me

[-] PKMKII@hexbear.net 8 points 3 weeks ago

Banana waffles are easy to do vegan

[-] decaptcha@hexbear.net 8 points 3 weeks ago

Peanut butter toast with a drizzle of gochujang and a crisp sweet apple and I'm peaking

[-] penitentkulak@hexbear.net 8 points 3 weeks ago* (last edited 3 weeks ago)

I have a "quesadilla" but with just refried beans for breakfast nearly every morning. Super easy to make and I can cook it while I prep tea/coffee, and any sides I might be adding like potatoes/toast/etc. I make a large batch of refried beans every few weeks and then freeze them in mason jars, and just always keep one of those in the fridge.

[-] simpletailor@hexbear.net 11 points 3 weeks ago

I know you just described your bean prep, but just to inform anyone reading who might buy beans from the shop: canned refried beans often contain lard in my experience

[-] woozy@hexbear.net 7 points 3 weeks ago* (last edited 3 weeks ago)

sometimes i have a pan fried tofu slice (could make more eggy with black salt but i usually just use salt and pepper) on buttered toast with pindjur or whatever savory spread i have on hand. could also just have a tomato sandwich or make a chickpea spread to have on some toast too with other veggies or pickled things.

my favorite breakfast is Vietnamese braised tofu with tomato, just need vegan fish sauce, tofu, tomato, green onion, sugar, and msg. i really really love ful medames too, it's really delicious and absolutely one of the most satisfying breakfast meals.

if i'm really too tired to cook something breakfasty but want something breakfasty and easy i tend to just have some fiber cereal with frozen wild blueberries or cream of wheat or frozen hashbrowns or a vegan cream cheese bagel.

but honestly most times i just eat whatever leftovers i have in the morning lol.

[-] sharkfucker420@lemmy.ml 6 points 3 weeks ago* (last edited 3 weeks ago)

Is ful medames the same as ful mudammas? If so I have made it once before and found it delicious. Had no idea it was a breakfast food. I fw it but found it to be somewhat labor intensive without a food processor. My body craves the fava bean though so maybe I will purchase one.

Edit: those bastards lied to me! I don't need them to be completely smooth! It doesn't even have to be a dip!

[-] woozy@hexbear.net 5 points 3 weeks ago

yaaaa!!! i never mash mine all the way cause i like having some chunks of fava bean. depending on what i have on hand or don't i omit some ingredients as well as long as i have the main spices i like and such, its just always so good :3

[-] Satanic_Mills@hexbear.net 5 points 3 weeks ago

Rich man's breakfast, middle class man's lunch, poor man's dinner as the saying goes.

[-] NotMushroomForDebate@lemmygrad.ml 3 points 3 weeks ago* (last edited 3 weeks ago)

Usually you'd just briefly mash the beans with the back of a fork or a potato masher.

Damn, I thought sandwiches were almost off limits. I have only had 1 good vegan

SandwichCucumber, tomato, spinach, a pepper of choice, hummus, olive oil, salt, and freshly ground pepper, on slightly toasted rye
and while that was very tasty I had little hope for sandwiches because of all the others I tried. This looks fire though and I have now found a new cooking channel, thanks.

vegan tacos : corn tortillas, potatoes, beans, nopales, any other veg you want to add

[-] NotMushroomForDebate@lemmygrad.ml 6 points 3 weeks ago* (last edited 3 weeks ago)

You can make wraps with a good spread and whatever ingredients you have on hand. Hummus or pesto are always solid choices.
You could use tofu or mock salami or chickpeas, canned beans, etc. and something like spinach or mushrooms or tomatoes or whatever.
In many countries you can find "high protein" tortilla wraps in most supermarkets, which are pretty good.

Another direction you could go is pancakes. I think they're considered breakfast food in the US.

[-] theuniqueone@lemmy.dbzer0.com 6 points 3 weeks ago

Oatmeal apples bananas.

[-] jol@discuss.tchncs.de 5 points 3 weeks ago

I buy things in bulk to make my own Müsli mix: nuts, seeds, dry and freeze dried fruits, oats. I mix some 12 cups of Müsli each time. Then in the morning, I either cook it in the stove if I have a slow morning, or in the microwave for a quick breakfast.

My goal is to have a nutricious mix, so here's what I mix currently:

  • seeds: flax, chia, sunflower, hemp, pumpkin
  • rolled oats
  • raisins and goji berries
  • freeze dried raspberries, cranberries, apples
  • roasted almonds and hazelnuts
[-] LENINSGHOSTFACEKILLA@hexbear.net 5 points 3 weeks ago

it can be pretty expensive in my area, but there's this product called "just eggs" that i love. pretty sure its mungbean? can't remember exactly, but its an awesome egg substitue and i use it for sandwhiches/burritos all the time.

[-] Sabbo@hexbear.net 6 points 3 weeks ago

Soaked mung dal overnight, then add some sulphurous salt.

[-] Robert_Kennedy_Jr@hexbear.net 5 points 3 weeks ago

They used to make a vegan mayo that was fucking delicious that I would mix with soy sauce and Sriracha for sushi rolls.

[-] Cowbee@hexbear.net 4 points 3 weeks ago

I thought they still made the mayo?

[-] Robert_Kennedy_Jr@hexbear.net 5 points 3 weeks ago

Oh I guess they're making it again, it was discontinued for several years.

[-] Cowbee@hexbear.net 4 points 3 weeks ago

Ah, gotcha.

[-] starkillerfish@hexbear.net 4 points 3 weeks ago

alpro + granola

[-] SnakeEyes@hexbear.net 3 points 3 weeks ago* (last edited 3 weeks ago)

You could make a brown sugar loaf drink (agua de panela) and an arepa, that's more or less what I have in the morning

Although I dunno if you can get brown sugar loaf (panela) easily where you live

[-] sharkfucker420@lemmy.ml 3 points 3 weeks ago

I can absolutely get panela, sounds tasty

[-] SnakeEyes@hexbear.net 4 points 3 weeks ago* (last edited 3 weeks ago)

it's very sweet and tasty and you can add your fav kind of vegan milk at the end if you want, the recipe is:

Ingredients

For 6 people Water 1 litre Panela 200 g Lemon (optional) 2

Preparation You start by heating the water in a pot over medium heat. While the water heats up, cut the panela into small pieces to facilitate its dissolution. Once the water is hot, but not boiling, then addadd the pieces of panela and (stir constantly to prevent the panela from sticking to the bottom of the pot) until it is completely dissolved.

Brown sugar loaf drink with lemon
