Peel and chop the bananas into smallish chunks and then freeze them. And you can blend the frozen bananas with some cocoa powder for really delicious chocolate nice cream.
I've had bananas that seem to go directly from green to brown. Not often but it was pretty annoying.

I'm not sure if there's been a good enough study on general "food literacy" to really know but I'd love to see one. Anecdotal so this is fairly worthless info: When I was a teen working at a pizza shop the amount of new hires that rolled through over the years that couldn't recognize some/many of the toppings on sight was alarming to me. I don't know how widespread that scenario is. I figure, at least some kids grow up completely ignorant of what the raw ingredients look like for any food they eat.

They are so far removed from a concrete reality that they've never seen a banana ripen. To the wealthy, all green bananas are bad and gross. The yellow bananas are good, and those are the ones people bring you when you pay them money for a banana, or the ones you see in your wealthy spaces.
For example, a wealthy person who has a fruit bowl on the counter will also have someone who changes the fruit out every day for fruit that is perfectly ripe that day. They may not even know fruit ages until they are well into adulthood and find out accidentally.

Estonian here, they usually show up moderately green in the store, oftentimes they'll still have the yellows from the last batch out when they bring in the fresh green ones. I prefer them a little green, I don't actually like yellow.

Also the ones on the photo are apparently plantains, which are much greener than cavendish bananas. Our regular bananas are never THIS green.
I buy for my family of four for the week. I have to buy them in a gradient from just-ripe yellow, to green as can be. Every time I hit the store I buy some that are this green.
It varies. The bananas in the picture are particularly green though.
