I've dissected them before and they were odorless. I dunno if that was some kind of special cleaning done beforehand, but they didn't smell when you opened them. It was like someone tangled up a bunch of bones in a cotton ball and dipped it in tar.

It's because they're pretty much down to bones and keratin. Anything that could putrify has already been scoured off by the bird's stomach acids and enzymes.
