I get your sentiment, but I think you're making it sound easier than it is to set up your own Lemmy instance. Afaik, you have to be pretty knowledgeable to set up an secure instance, and pay for a domain, and hosting etc. So there's a few things right there that stop someone from creating their own instance.
Be the change you want to see. Why do you bring up the US so much in your posts?

Unfortunately, there will be no one left on lemmy. Maybe a couple of Germans.
Europe-centric communities on reddit were niche, but existed. On lemmy they simply don't exist.

In the top 20, you have discuss.tchncs.de, lemmy.zip, sopuli.xyz
In fact, the only generalist US instance is https://discuss.online/, and is only in the top 40.
Move yourself. Americans seem to have no problem moving into any area they desire, hence the colonist title.
