Just an fyi, inuit is already plural (singular is inuk)
That is true, but inuit writers when writing in other languages will use "Inuits" (English) or "Inuitter" (Danish).
Like if sermitsiaq uses it, it has to be at least colloquially accepted. But you're right that proper use of Kalaallisut in English would be inuk/inuit
