It used to be a very cheap cut. A packer brisket used to run $25-30 for a 15lb cut. That same thing can run $100 or more depending on where the beef comes from, now. And that is for select or choice grades. Prime runs $130 or more.

Combine that with the fact that every clown with a smoker thinks they're a gourmet chef that deserves $20/lb for brisket and here we are I guess.

Bbq has become trendy and most places in Texas expect $20/lb for brisket now. Even the shitty places, of which there are many. Some of the really overpriced places pull $30/lb or more.

(background) I am a plumber. Part of my job is to fix the broken stuff under the slab/foundation of your home. One way to access it is to locate the area above ground, break concrete and access the plumbing from above. Another way is to tunnel from the edge of the foundation, however far, to the trouble area and repair it.

The shop I'm at is really small so we don't have a dedicated dig crew, we sub that part of the job out to someone else. The someone else I am referring to is originally from Ciudad Juarez but has paperwork that allows him to work in the US.

Whenever we call him, the crews he brings out are all from Mexico- none of them speak English, and the guys always last a couple weeks before they end up being replaced. I understand they are all here illegally and I don't give a fuck. I've never had an issue personal or professional with a single one of the likely hundred guys I've worked with.

That brings me to a guy named Mateo. I've needed semi long term help at a ranch running underground gas lines so he has been coming with me to help. He drives to the shop and we ride out in my service truck.

I've gotten to know Mateo over the last couple weeks. He is a honest, good hearted person. He has a wife whom I have met too, her name is Claudia. Her immigration status is the same as his, fuzzy.

This past Saturday Mateo, and Claudia were pulled over while driving for not signaling at a turn. Personally I think it was because he is Mestizo and much darker skinned than average Hispanic. You can kinda tell they're from deeper into Mexico sorta because of that.

Mateo, and his wife were arrested and are both being held on an immigration detainer. They will give up their house, their truck, their dog, and everything else, and be unceremoniously shipped across the border. I do not care that Mateo did not follow the laws of the land. I do care that he likely will not be back.

I'm so fucking upset by this.

Some background:

A home I do the plumbing for suffered a catastrophic leak some time back and as part of the insurance's requisites for continued coverage, the home required installation of a couple automated shutoffs, two for the 2" domestic feeds, and two for the reverse osmosis systems. As part of the install process, I have access to the monitor/control apps.

I have to say- the home is for two people. It is over 10,000 square feet. It has five fucking ice makers. It has six bathrooms. I've worked in every single one of them.

So anyway, I'm sitting here at ten forty five pm, watching one of the RO valves tick off the gallons used since install. I'm currently setting use parameters and hitting my vape (I am clocked in and making double time- I have to have all of this stuff set up and turned over to the owner for insurance agent to verify by 9 tomorrow).

It was installed around 3pm today. It has used nearly 100 gallons as of this posting, in a period of 7 hours. That's just ONE of the RO system valves. There's TWO of them here. So double it. 800 gallons a day. Times 30 days. And that's before the systems have had any demand put on them. Twenty two (ish?) thousand gallons a month, so that these boogie fucks can have ice for their highball, and a spot free rinse for their Maybach.

That's not counting the water used on irrigation, or filling their hot tub and pool, and whatever else the rich do with the water. I assume they just turn the hose on, toss it in the yard and let it run, because there can. I'll post the big valve's numbers in a day or two when the valves exit their learning phase.

Where I am, e we get our water from surface means only; rivers, lakes, reservoirs etc. ground water is brackish due to proximity to the Gulf of Mexico. Where I live, our combined reserves are 12% of its original capacity. The city here has publicized when they expect to hit Emergency Level 1, which means that there is less than 180 days of water remaining. We expect to hit that Emergency Level in mid 2026. It's 2 weeks from beginning of 2026.
