Making them to quality with unique animations and voice lines for each character instead of just a cut n paste like in (s)NES is a lot more work. There are 7 characters to do this for. I'd imagine it's a lot more than just stat boosts and skill trees.

If they could stop filling each entry with 700 hours of crap filler there might be less work to do
I like deep lore filler! Some of the minigames are hell but nit every mini will appeal to everyone. They said they would make extra more optional except for key story beats, i just hope they don't lock it behind a NG+.

Just the upcoming part 3. But if you refuse to play them I do recommend watching the Team Four Star parody. Just say there are bits in there that made it into remake - or at least it seemed like the devs gave nods to it.
Assume it's something they're doing just for the 3rd one. The way it's described sounds kinda like FF X-2's dress sphere system where they swap out outfits to change how the character works.

As long as the outfits serve. Nothing worse than being stuck in the ugly tunic for a third of the game
