Dessalines seems to think the Winnie the Pooh likening is because Pooh is yellow and not because he is fat and round. Which, in a way, makes him the racist one.
The "Asian yellow skin" thing never made any sense to me. I've seen a ton of Asians, none of them were yellow, not even close. Xi Jinping has the same complexion as a white guy with a tan.
I think it was substantially influenced by the traditional four humours. Carl Linnaeus' work was not the first to call East Asians "yellow", but it was very widely spread and influential. He categorised humans into four races and associated each with one of the humours, then describing that race as having the characteristics associated with the humour (hence the equally-odd "red" description for Native Americans)

You can be confused when checking it out because it not only allows you to navigate communities individually like on Lemmy but also bundle of communities for a single feed by topic or custom feeds created by others (likw how people can bundle a list of profiles for its own custom feed on Bluesky, but instead you do it with communities on PieFed)

Topics (PieFed) = by so far what I understood its created by the instance usually and by default when self-hosting your own it will have some topics already organized with feed from communities related to the topic title
Feed (PieFed) = user & instance custom built feed of communities (Lemmy or PieFed) bundled together into a single feed and easily shareable with others

Lemm.ee indeed. So far it's been quite decent alternative to lemmy. I used voyager on mobile, switched to Interstellar, which is not as polished yet honestly, but it's still very much usable. For web interface I find the defaults much, MUCH better on piefed than on lemmy. I disliked lemmys default to be so bad I'd rather used something else like Alexandrite or Photon.
To be honest, since Lemm.ee anouncement my main goal was to ditch lemmy (thanks to dessalines) and stay with fediverse. The other consideration was mbin (like fedia.io), but after some reading it seems it's very limited by manpower and probably won't see much development in near future.

Well, admins can see removed comments and posts. But yes, the modlog is public and the removed content is also shown there.
The way lumi works is that it is decentralized and for bands to work across instances... if you are the admin of an instance then you can see everything relating to that instance including mod actions that effect users that use your instance. Nothing is private.
Honestly that's a good thing. I just wish there was a button directly on removed comments to read them right there, though maybe that's the app's job to implement.
Depends on what you use. I can see my own deleted comments from quite a few posts that various instance admins decided to remove.

There's a bit of a bad faith feedback loop where they started using it as a litmus test for users who are just trying to provoke instance bans, etc. At this point Rule 1 is pretty all encompassing to oblige those users. But it's very easy to catch strays. In some of those communities it's like those classroom lists of banned Gen Z words that get posted around.
