On the one hand, cabbage is cabbage, and that's pretty fuckin good. On the other hand, brussel sprouts are like tiny cabbages, and aren't small versions of things better
Coleslaw is good and sauerkraut is good on a hotdog for sure.
Cabbage just tastes like hard lettuce idk. Never a big fan of the other ones you listed

I used to think the same as you though but the ways of the chef have opened me to pathways of knowledge some might find unnatural and treacherous
Try roasting some until browned after seasoning it good and then braise it in stock before adding it to a creamy coconut curry
