Most of the work has already been done! I think people mostly use this for rudder pedal setups for DCS, but something like vjoy should let you do whatever you want!
Oh cool! I'm on linux which looks to have an input driver in the kernel for wiimotes and the fit board. This is really cool. Gonna have to dust them off.
