It's a nice coincidence that YarraByte chose a lotus for today's emoji as tomorrow is Vesak Day!
Today I'm taking it fairly easy. My biggest task is to make this delicious prawn curry (incl shallow frying the heads first for extra flavour). One of the few recipes that DON'T use tomato - I'm sick of it being in every other curry recipe out there. Beans, eggplant, gourds, greens, all with tomato! It's not necessary! Have some balance.
Btw - they gave me the prawns in a big ziplock bag type thing, instead of wrapped up. Is this new? The ziploc didn't close very well and I nearly dropped one of my items into a pile of prawns during checkout.
tonight I am making a mango curry that has no tomato
also, TIL about Vesak Day
I too have just learnt about vesak day. V interesting!
Vesak Day is probably the only real day of significance all Buddhists observe worldwide, there probably would've been more events on today if it wasn't for Mother's Day overlapping (and it's not a "festive day" per se...)
Tomato is totally overkill with mango. Too much acidity. I'm adding some tamarind to the prawns and no tomato in my dal or beans. I was rummaging through my freezer meals last night and highly annoyed that most things had tomato in them
Vesak day - is that the same as Buddha Jayanti? Either way 🪷🙏🏻
Edit: yes it is.
Well I am cleaning my home 🤔 🪷🧹
