The dietician has taken ham and salami off my wife's menu to address cholesterol. It should likely apply to me also, but I'm not organised enough to book things like "check ups" and dieticians. So I bought a large whole chook last weekend and we roasted it. It's going into sandwiches this week (and will likely be a weekly thing for the foreseeable future) instead of ham/salami. So far, everyone likes the change. It works out far cheaper also: over 2kg of chook is about he prices of 500g of ham/salami.

Poached chicken breast is awesome to substitute for deli meat and you can add subtle flavours to it.

I personally use drumsticks as a bag of them are pretty cheap and the meat is so tender.

Air fry 1 big one or 2 medium or small should be enough for one sandwich size serving. Season before cooking, let stand for a few mins then cut the meat off.

A whole chook in the instant pot for 40 mins is easy peasy and you get left over stock. I do it for curries, chilli and apricot chicken.

The chook also wont have the nitrites found in ham and salami so there's another health bonus.
