Hi! Im glad you like it! Its funny because yesterday i harvested our beets for winter, spent whole day cooking and preserving them in jars and with leftovers i will make some soup today! Cant wait.

I solved my need for fresh herbs by growing them myself.

Let it sit in the fridge longer and it will turn almost purple. But I'm not that patient.

Once I made it with buttermilk it was good too and I think I read some recipe where plain thinned yoghurt was used. Hope I did not offended fellow Lithuanians here with this recomendation hehe.

My absolutely favorite cold beetroot soup for hot summer! Tried it in Lithuania on my vacation few years back and it was love at first sip. It is called Šaltibarščiai (sorry if I misspelled something I'm not Lithuanian:)). It's fantastic!

 

Homegrown tomatoes, zucchini an onions with some capers and mozzarella. I'm still working on my crust, I think I need higher temperature.
