Well Apple generally streams at the highest quality available assuming you tweaked your settings. Any upgrades are rolled in to ensure the possibility of the best quality image/sound. One the features I really enjoy.

Just set those photos/videos to private. This has been available for several years. Ensure full iCloud encryption is on and your good.
Funny. People defend YouTube for a clearly escalating amount of ads. Yet when YouTube screwed creators a few years back, non of you came to their rescue. Yet hear people are claiming these ads are to pay creators. ROFLAO I think several people are working for YouTube against creators and consumers. Lots of ways to block the BS.
They are. You’re just not paying attention. They just won’t rush it until enough interest and usage trigger the full push. But several recent leaks have shown that they are indeed going that way.
No issues here on any of the latest AppleTV model (4 on site) and latest iOS updates.
