Artists of old painted the sun white but as the paint aged it yellowed. Modern artists naively copied from them by painting the sun yellow from the start.

I made this up but the kernels of truth are that white paints usually yellow over time (unless it's lead paint) and many artists have copied unintentional elements of historical art such as drab colouring aquired from dust or white marble statues (typicall were originally painted).
