I assume you're doing these in the oven due to the size, right? They're finicky enough on the stove top, I doubt I could pull that off. Looks perfect!
Yes, precisely. I can never find big enough tortillas to make the big burritos I grew up with in the states, so I decided to take matters into my own hands. The pizza steel is about the right size for this, but when I put it on the hob it doesn't heat very evenly. This is kind of a compromise solution. I'm thinking of using tanzhong in the dough next time, and possibly misting water over the top to protect the dry side during cooking. It's pretty close to good enough already, but my habit with any recipe is to cook it for a week and really try to dial it in... The hardest part there is making sure these burritos are within my calorie budget!
Perhaps this is a silly idea, but why not take it out of the oven after it's heated up?
I might try it! They cook so fast I could probably just stand there with the oven open. The cast iron retains enough heat to cook one all the way through, I bet.
Nice! Any tricks you're using to roll them out thin when they're that big?
Just make sure the dough is well rested, and take great care when moving them. I used a long wooden flat spurtle to move them sometimes, other times just hands. Don't even try to roll out the next one while it's cooking, they will overcook.
