im sorry. many species that have existed before us have already gone extinct. I don't get the significance here.

Not much, more fish in the sea. Something in the depts will likely surface to take its place as the food abundance causes evolution to compensate.
With overfishing as it is most sharks are endangered already. There would be no abundance of food, and no replacement except humans.
It'd be cool to see a remake of jaws except the shark is played by a fishing trawler.

More unstable fluctuations in the populations of other marine species.
As they're a keystone predator, if they 'suddenly' go extinct, the hierarchy of the ocean would change dramatically. The influence on us would probably be negligible at first, but it would soon go to shit. Any sudden and dramatic change to a finely balanced ecosystem would be catastrophic. Over-population, numerous species disappearing, algae blooms, coral death. All the bad stuff.
