I bothered to watch the video, and absolutely no one thinks they're water moccasins...
He says it as a joke because if that was true it would be very bad, so he immediately laughs and says what they actually are.
Like that's basic humor, if someone asks "what is that?" you say something dangerous first to tease them before laughing and saying its actually not dangerous.
This is honestly the closest to normal that RFK could be in a video. The weirdest thing about it is he's a Kennedy.

It’s worse, because the position he holds is one MANY people look to for advice on how to think about and seek health care for themselves. This kind of "I am immune to snakebite because of my religion" thing has a history of getting people killed.
Was this a case of overreliance on faith? Seems to me more likely that its just that the idea that a snake could bite him and it will hurt that is too complex for him to understand.

He 100% knew what snakes they were, that they would bite him, but that the bite wouldn't do anything.
The author just doesn't know how common of a joke saying a snake that you know is harmless is really deadly. Which is pretty hard to believe someone watched the video and didn't know it was a joke.
I've seen the same thing done with rat snakes by multiple people, and they were big enough to plausibly be moccasins.
