might help to clarify in what ways you're a picky eater and what kinds of chains you already like
also, why big food chain restaurants? it seems like you're more likely to have poor experiences at chain restaurants than local ones, I would be seeking out recommended, good quality non-chain restaurants if you want positive experiences.
The cheesecake factory, surprisingly, makes everything from scratch (except hilariously the cheesecake, which is frozen). Might be a good place to start trying new things. It's easily available, from scratch, and a large chain.
