Yeah, it's fine, you don't really miss much, XCOM 2 is sort of a "reimagining" anyway, where humanity lost the war against the aliens in the first XCOM and you now lead a resistance movement against them. Personally I like the vibe a lot more, it matches the feel of a scrappy squad of soldiers using whatever they can to get an edge much better. It was always weird in the first game that you are earth's first and last line of defense against the aliens and yet you send a squad of like 6 people to fight aliens and only have one dropship so you can't send multiple squads to different locations at once.
Yeah, that's a holdover from the original original game from the 90s where a big part of the early game was simply struggling to detect alien activity to stop them in the firat place while they stealthily tried to infiltrate the world governments to cut your limited funding.
You weren't the best and last line of defense, you were just the people crazy enough to believe aliens were a threat, with tenuous connections to get funds from governments to try and fund the fight. There's plenty of in game data about how all your starting equipment is military hand me downs and whatever mothballed prototype designs your team could snatch up on the cheap and retrofit. You can also field squads of up to 14 soldiers from the start, which helps because things are far more of a meat grinder and less of a "just keep enough squads to rotate folks out". Up through mid game, losing two soldiers a mission isn't unusual.
The initial scrappiness and meat grinder aspects were significantly lessened in the more recent XCOM reboot from 2012, which tends to be a more fun experience overall, but does lead to a little bit of dissonance.
The first time I tried to play the OG Xcom I got cornered in a barn at night and sniped from out of human dark vision range. I persisted and shortly after landed a terror mission where half my squad died trying to exit the lander. It truly can be a brutal game

Yeah, you can, personally I think xcom2 is the better game as well (well, in terms of polish and mod support).
I've never played the dlc with the alien kings/queens/whatever. However, Shen's gift (I think?) is required for most of the important mods now (namely long war 2/lwotc) and war of the chosen is needed for the more "complete" long war mod. Even without mods, I'd say those 2 are worth it anyways, the chosen can be fun or at least an additional challenge.
Should I install those 2 DLC before starting the game or should I go in vanilla and get the DLC later?
Yeah, a vanilla playthrough would be fine too lol. See my other comment about mods though.
I'd also add that you shouldn't ignore mods if you wanna get the most out of the game. First playthrough, yeah go without mods and get a sense of the game. But I have like an embarrassing amount of time in this game and I think I did one or two playthroughs without mods, so a majority of my playtime is thanks to mods, especially long War of the chosen.
I'm totally down to check out mods later if my first playthrough is as good as everyone suggests it will be. Loved that huge FTL mod for example, forget what it's called.

I misread this as "Polish mod support" and thought that was oddly specific, but I'm always happy to get new language mods for the game, frustrating when an international team all speak the same US english or British english.

XCom 2 without WotC is kinda bad but with it, its one of my favorite games.
I'd recommend mod-less for at least your first playthough and add mods later.
I bounced off Xcom 1 several times and never felt like I was missing anything.
You play XCOM: UFO Defense more for the bragging rights of playing an unforgiving game with a steep learning curve and less about having a good time.
