Picture is of my daughter's portion, since she has the cutest bowl lol. I had to use mild gochujang since she can't quite handle the spicy kind yet

We're lucky to have a huge East Asian supermarket nearby that has lots of cute kids tableware lol

It was pretty simple to make. I adapted this recipe with some substitutions on the ingredients due to some overlap with produce I'm using later in the week: https://frommybowl.com/vegan-tteokbokki/.

If you use a spinach or similar green, I'd drop it in during the last 2-5 mins of cooking the rice cakes. Don't want to obliterate them!

My kid ate all her veggies to get a few extra rice cakes at the end, so I'll rack this one up as a W!

It turned out nicely, plus I've got half a pack of the rice cakes to make a WFH lunch later in the week with some kimchi 👹
