I disagree that established science requires belief
It requires belief in proven results. Those who are unwilling to learn won't learn, and there is nothing that can be done to change this.
Newton's laws were established science for centuries and they were proven to be not as good as Relativity some centuries later. Given that there is some incompatibility between quantum physics and Relativity, and the dark energy/matter mystery, it is likely that the current physics theories are also not completely correct. Even if we solve that, verification will always be limited to a certain degree of precision. So we will never be able to prove that a theory is fully correct, we can only try to prove that it is wrong indefinitely. But we can have a rational belief based on their degree of verification and make bridges, computers and medicine with them.
Our understanding of it does, because that is how we choose to interprit the printed rules we think the universe is governed by.
How the universe actually works is anyones guess, but we can make an educated and informed attempt.
