If you like phoenix feet, then jellied eels hits some of the same vibe. Eel is a red meat, and the jelly is rich in umami. One of the great 'looks like shit, but tastes great' dishes.
I have never heard of chicken feet referred to as Phoenix feet in my life, and I've eaten it a fair few times. Mind blown
Only the brave shall enjoy such a delicacy
