I use a chemex, with a re-usable cloth filter. It gives a slightly different brew, and can be a little more work to clean up, but it generates much less waste. (the cloth filters only need replacement once every 6 months or so, and are fully bio-degradable.)
Pass it through a fine-mess strainer, then us it as the chocolate part of a Torte or Cheesecake!

Monoloco has a very hot sauce that's made without extract. It's only peppers, lemon, and garlic, so it adds not much else in terms of flavor. Otherwise theres YellowBird, which is very tasty and widely avaliable. Also check out https://heatonist.com/, they have a huge variety.

Part of the reason it's so cheap is because they sell a lot of power to the US NW, in addition to contracts providing reserve power through reverse-pumping the dams.
