Do I have to double tap the side button for Apple Pay or will it automatically pull up wallet near NFC reader like the iPhone? in c/[email protected]

Both. Holding your watch near a device that expecting payment will pull up your wallet to your default card automatically but you will always have to confirm you want to pay with the selected card.
