I haven’t really used my Apple Watch for Apple Pay before and was wondering if I have to double tap the side button every time.

Does the iPhone do that? I’ve always double tapped the side button… had no idea it would bring the wallet up automatically.

Both. Holding your watch near a device that expecting payment will pull up your wallet to your default card automatically but you will always have to confirm you want to pay with the selected card.

Even if it pulls up. You will still have to double tap to confirm and rescan. So what is the point

The only case where you do not have to double click a confirm id for touchless transit systems. But it is an option you need to enable. It just gets you through the subway turnstile or bus boarding a bit faster. Obviously it depends on your transit system and country (even city), and of course if you even use a transit system.
