Been on Lemmy over a year, but I still have no idea how to do these emojis and at this point I'm too afraid to ask.

you can either type : followed by two characters and wait for suggestions, or press the emoji button ( ← this one)

it's possible that they haven't implemented it; I'm not sure how many instances actually have custom emojis, so they might just expect users to use an external emoji keyboard
