Yuck, who wants to have poop smell in the rest of the house/apartment?

Locking the door is the quick and easy way to signal that the room is occupied, knocking and/or asking and waiting for an answer would invariably take longer and create uncomfortable situations whenever someone doesn't remember or doesn't have the patience to wait for the answer or is just visiting and assuming that everyone locks the door when they use the bathroom.

Does your bathroom not have a fan?

A person visibly sitting on a toilet is an even clearer signal, though.

Anyway, the smell signals the cats that it's time to hang out in the bathroom.

It does in fact not have a fan, and frankly I doubt that a would keep the smell completely out of the hallway if you leave the door open.

    The cat can get fucked.

    Don't fuck cats. That's nasty.

Not even a window in the bathroom? That's also nasty. In my country, bathrooms are required to be ventilated.

Also, most shits shouldn't reek so much the odor fills multiple rooms. That's a separate issue.
