Discard Apple Cake (thelemmy.club)

I was looking for a way to use as much discard as possible. (There is a limit of how many pancake I can eat on a diet.)

I tried This recipe for the first time. And of course I can't leave instructions all alone, so:
Divided by 1.8 so it fits in a 9x9. Instead of cinnamon, I used pumpkin spice.
And added 0.25 tsp baking powder also.
And added about 160g discard with 5g of cornstarch added.

It isn't too sweet, could use a bit more salt (at least to my taste). I guess if you make some cinnamon roll icing that would go really well with it.

I believe it will freeze very well.

Edit #3: I'm done witb editing. Happy with the end results.

Do you already know this recipe for sourdough cookies? It has become my go to recipe for left over discard. I'm going to try the cake in autumn when the apple harvest begins!

If I could upvote this a thousand times I would. I keep balls of this cookie dough in my freezer at all times for years now, my family never gets tired of them. I double the recipe when I make them. It is a perfect chocolate chip cookie. I do use slightly less chocolate chips but that's a personal preference thing, and really a very small adjustment.

My next try is going to be discard pretzel bites from the same website as this apple cake.
