Is it possible that Erin wanted to make the elderlies a little bit sick (not actually kill them outright) to bring Simon closer to her? Munchausen by proxy perhaps?
Maybe? At lunch she told them she had cancer. That’s a big fat lie too, maybe she wanted them to feel sorry for her and give her attention. But they can’t do that if they are dead, so who knows? She probably didn’t think that far. None of her story is cohesive enough to make me think she had some genius plan. Maybe in her head, making them feel sorry for her and then suffering a slow death pleased her, and that’s as far as her logic went.
I don't think she had a genius plan either that's why I think it was an impulsive act. Planned murder? I don't think so.
Depending on what the prosecution have I wouldn't be surprised if the jury want the charges downgraded to manslaughter or negligence when they go out.
