Great news guys. The capsicums are fine.

I sliced half of them for a stirfry. Still thinking what to do with the other half.

Stuff them with spicy rice and/or mince and bake them with cheese on top.

Oooh interesting and good idea. Mine are little actually so like snack size but maybe I'll try and do a fried rice with bacon/ham tomorrow, stuff them and top it with cheese. Thanks!

I learned a new word the other day care of someone in the DT. Pepperonata. Seems like an ideal use for extra capsicums!
