Check out opensuse tumbleweed. It have been very stable on my Nvidia systems. Getting the packages out nearly without issues, often faster than Arch.

Best OOTB experience for a bleeding edge distrito imho.

Excellent snapshots with rollback from GRUB in case a bad nvidia update messes with your system.

Kubernetes. With docker I can recreate the entire host without documentation.

Purchase an extra memory stick for your existing laptop and run your tools on a virtual machine. Very few utilities require an physical machine.

Edit: MBP 2015 is not memory upgradable. But I believe my statement is still your best option.
