The previous owners of my house ran two Ethernet cables from the fiber modem to a point near the center of the house, where they enter the wall... and apparently never exit it. in c/[email protected]

Cut with a bit of slack to the wall. So if you find the other ends later, you can terminate all four cut ends and place a switch there.
