    Sushi grade salmon seared for a few seconds is delicious.

    (Take a chunk of salmon loin. Cut in finger thick slices. Sear in oil/butter for 5-10 seconds on each side. Enjoy the combination of fried and raw salmon.)

    No way in hell I'm eating that salmon raw if it hasn't been flash frozen first (which, I hope, the chef has done since she paid a lot of money for it). Anisakis is something you don't want to fuck around with.

    Yeah, I'm pretty sure it's illegal to sell raw salmon to be eaten raw unless it has been frozen to kill parasites. So because it's been frozen, a chef bragging about how it was caught the same day would just be misleading people. It can be kept frozen for some time and still maintain the same amount of freshness for the person eating.

    Not necessarily that close. I know a guy who catches tuna in the Atlantic. Goes out with a rod, and catches about one per month. When he catches one, he immediately calls it in and heads to port. When he gets to port there's some Japanese guys waiting for him, they assess the fish, buy it for a significant amount of money, put it on ice and it's put onto a plane bound for Tokyo.

    So for high end sushi, it's possible for to be on someone's plate in Tokyo about 20 hours after being caught in the Atlantic. Of course if it were Tokyo, time zones would make it weird to say "this morning" because of the dateline. But it wouldn't be too much of a stretch to say a fish caught in the Atlantic in the morning that's on someone's plate about 20 hours later was caught "this morning" and the chef may not be all that worried about the timezone dateline stuff.

    I'd like to imagine this interaction continues. She keeps ordering nigiri and keeps putting it on the stove, and the chef has no recourse in the matter and keeps serving her and gets progressively more stressed.
