I have a Bose Cinemate from about 2010/2011 that has a universal remote. I’ve been using it for so long now, that I’m concerned it might not last much longer. The only thing I really need it for is for volume controls, and I’m wondering if I can map the volume up/down controls to my Apple Remote. If this is possible, how do I map the buttons?

Yes, in the settings there is the option to learn the volume up/down and mute functions. It will ask you to hold each of those buttons on the Bose remote until a progress bar is filled.

As u/SBYMB said use the feature to learn the volume control. It's located under Home Theater Control do not use the Learn Remote under Other Devices.
