If you use Airplay you get stereo audio, HDMI is better for audio with movies.

Do you know if you can use an HDMI splitter to have one cable to soundbar and the other to tv/projector?
Yes you can do that. I have a HDFurry Arcana that was made for that the down side is it's expensive. There are cheaper devices now that reportedly work just as well but lack some of the features the Arcana has.
If you go with a soundbar that only has one HDMI input (ARC/eARC) then the Arcana or the $99 U9 View HD or one of it's clones will work.
If you get a sound bar that has inputs in addition to the ARC/eARC port then the $50 OREI or similar will work.
Similar to previous post; You won’t get Dolby Atmos via wireless.
