In my current setup, the ethernet cat6 runs from my closet(where all wiring originates) to different parts of the house. I know which wires runs from my closet to study room through attic. I want to know if i can cut that wire and add a spitter or maybe poe switch in attic to run seperate ethernet line to poe camera?

You can add a switch, but you cannot splice.
