Developing an app is not easy or fast. Its time consuming and requires you pour a lot of your own time and money. I'd rather see it in whatever platform ensures you get the most % of the actual money. If the tip jar approach means Apple gets 30%. It's against their ToS to link to off-platform payment solutions, right, so you wouldn't be able to put a link to OC in the settings, I presume. Both is probably fine, in reality, money is money. OG users like us would just do whatever's more practical. I already use OC to donate to other FOSS projects, so this would just add to that monthly spend.
