I have an Apple watch 9 and trying to get it to show steps. Can’t seem to find it in the custom options

Unfortunately you can’t do that natively. The best you can do is have your activity rings and tapping that will open the activity app to see how many steps you’ve taken so far. If you want a step counter complication on your watch face you’ll need an app from the App Store. Just search for “steps complication”. That brought up a whole bunch of options.
