I filmed several workshops that were about an hour to two hours each. While I can see them on my iphone, they will not back up to Google Photos (which I use as iCloud because it's cheaper) and when I connect my phone via usb to my mac and try to import it to Photos, no progress has been made, even though I've had my phone connected to my laptop for several hours.

I'm kicking myself for not buying the 1T iphone. I find that video storage/ organization is the MOST annoying aspects of Apple. Data management is much easier with a regular SD card to hard drive.

If you have any suggestions, please let me know. I don't want to delete these videos, but they take up so much space it makes my iphone unusable.

Get a card reader for your phone and an SD card of appropriate capacity. Copy to SD card, plug SD card into computer, voila.
