I’ve always had good luck protecting my phones with OtterBox products, so I’m leaning towards an OtterBox watch case. I don’t know if I should get one with the built in screen protector or get the exo edge and add a separate screen protector . What do you guys recommend?

If you have a standard Apple Watch, 7, 8, 9 or SE get a screen protector. A plastic screen protector/film would be best. If You have an Ultra get a Glass screen protector. For either standard or ultra I recommend RhinoShield Crashguard NX. I’ve had several Apple Watch models. Plenty are too bulky, too annoying to put on, or just suck. But the RhinoShield by far has been the best one of I’ve used. It’s more of an Otterbox than the official Otterbox ones have been in my experience.
