That's what I was wondering because I thought rice is necessarily water intensive, so enough to maintain even a small population (assuming water requirements are true) in space has me boggled. I can't wait to learn more!

Same, and rice definitely makes sense if you have access to a local source of water which we know is possible on the moon. Next decade will be exciting.
