Why is this being down voted?
I didn't downvote myself but I also see little advantage for a vegan group chat in comparison to the different public communities here on Lemmy. A pseudonymous group chat that's free to join for everyone doesn't provide much privacy and all the content would be unstructured. Thus, if interesting content is shared there, it will be hard to find it again later or share it with other people. I prefer a thread-based platform like Lemmy or traditional message boards.

Also, why Signal, when there’s Matrix? There’s a couple of somewhat active vegan chat rooms at https://matrix.to/#/#vegan.en:tedomum.net .
Very true, but Signal is easier to set up and use, and a lot more secure and private. 😉

Signal might be slightly easier for some, but certainly Matrix, being decentralized and completely open source, is the more secure one.
Signal is as well, and it doesn't stand the same in terms of security or privacy. Yes, self hosting is a huge pro but their huge leaks of metadata in transport of messages, among many other reasons, keeps signal as my preferred communication medium for this.
