you can turn off automated updates in the settings...
lol. I did that yet. It simply delays the inevitable: update rape.
I literally have no idea what you're on about. A friend of mine is still using their iPhone 6 running ios 12. Nobody is forcing you to update stuff
I have this damn iPhone 12 or 14 I dunno what it is.
It doesn’t do anything I want. It always changes.
All the apps stop working and I have to manually update them constantly because I have auto updates off.
My os updates on its own after me telling it not to. At some point it just does it.

I recommend spending 30m and deep diving into the settings. Just go through each category one by one, read what’s there, and consider how it might change your experience.
Did you turn off all switches at general > software update > Automatic updates?
