I know Arch is all about minimalism, but I'm also limited on time and I just wanted to get a working GUI. Is it a huge faux pas to install all the default packages?

That's the beauty of Linux, you get to use it the way you want to. There's probably an elitist that will say you did it wrong, but just ignore them. Even if you did it the "wrong" way you can learn from it.
