Mushrooms are vegan, yes. Veganism is a way of life that is against the exploitation of animals. While mushrooms have incredible biology and chemistry, their fruiting parts are not animals or even the main part of the organism which is the mycelium they come from.

Assuming this is serious (I'm terrible at detecting sarcasm) then no. Mushrooms don't have a brain or anything that would allow them to experience sentience.

Yeah, it was a serious question. I've heard that they've apparently displayed some sentient behaviours, but I'm not very knowledgeable on this topic.

Mushrooms iirc are basically the "fruit" part of mycelium, eating a mushroom is about the equivalent of eating an apple
