Those channels give the burrito moisture somewhere to go so the tortilla stays dry. ๐
Paper towel under breads/wraps in the microwave is how I do the same thing. The trick is allowing air flow on all sides, otherwise moisture gets stuck while trying to exit the food making it soggy.
