Isn’t that obvious? How else would Google make money from Android? Apple makes money when they sell you an iPhone, but Samsung makes money when they sell you a Galaxy. So, Google makes money by tracking everything you do on that Galaxy and showing you ads.

Not that Apple doesn’t track you. Their privacy policies pretty clearly state they do. But at least you can easily turn off most of Apple’s tracking “features”.

But if you want an OS that doesn't track you, there’s Murena.

Just as a quick warning, I think /e/OS is still getting ironed out. It's not fully de-googled and security updates can be significantly delayed. Not that it's some evil or unsafe OS to be avoided, but it's definitely with knowing if you end up going with it.
