My boss is obsessed with the bougie bakeries. (Not Denmark but I assume the situation is sort of similar across central European cities).

It's sad how over the last decade or so a bunch of relatively affordable independent bakeries closed down and got replaced by bakeries where a loaf of bread or a sandwich costs almost as much as a full meal. And the bakery chains hiked up their prices too.

Idk I guess knowing which farm the heritage grain came from is sort of nice but really not worth it to me.
