Pretty sure that the Rolling Stones has a whole song about where this "beef" is coming from.

My friend had a great theory that it's the horses being put to slaughter.

Can we test the beef to determine what animal it came from?

Pretty easy to test for that using DNA testing.

Or just eating it. Taste is different.

Source: in my area we eat horses. A lot.

Genuine question, what is the taste profile of horse meat?

Ok, so one thing I'm terrible at is describing the taste of food, so I'll try my best: it has more flavour than beef, but it's delicate flavour and doesn't taste gamey. It has a shitload of iron. In my experience the taste changes a lot depending on the cut, more than beef, but to be honest, the vast majority of the time I eat horse meat, it's in the form of raw, ground meat.

Having never eaten horse myself, as I've never had the opportunity, I always expected it would taste similar to lamb, venison, goat, etc. Am I thinking correctly, or way off?

Nope, it's much closer to beef than game or sheep, it's rich in iron and has a somewhat sweet flavour, more delicate than beef while actually being more tasty, if that makes any sense.
